HHD spin down

If someone could help me out with afew little problem I'm having I would much appreciate it.*

I use to use a laptop for a home media server aswell as other things like running a game server. This would run 24/7, I use to have a 2tb external HDD attached via USB. After x amount of time the external hdd would spin down, go into a sleep mode. I would have the computer itself set so it never turned off.*
Iv since built a new server with 7TB of disk space with internal HDD's, the OS is running of an SSD. The problem is the HDD constantly runs and I want them to operate how my external HDD worked as it was quieter during the night when not in use.*
I have done a quick search in google and gone into power option and set the HDD spin down timer but that Dosent seem to do anything, i want the ssd to stay running just the storage drives. In there I have the screen to turn of after 10min and to never turn pc of/ sleep.*

Also once I'd set everything up I.e OS software/ program's there is no need to have a keyboard, mouse and monitor attached. I have been remote accessing the server but i have found when I log in sometimes it's like the server has restarted at some point, how can I find out what's happening. Lastly iv noticed you cant "shut down" when in remote desktop, is there a way to enable this.*

It will restart automatically to install windows updates.

As for shutting down remotely, you click start, then windows security, you get the option to shut down in there.

Thanks for the reply, that will explain the restart as its a new install.

I will look into the shutdown when I get home.

Just the hdd issues to sort out.
