Homemade Doner Kebab

Yes it is, isn't it? A ban marie is a hot water bath... If not I've been doing recipes wrong for years!


I'll actually try this I think, looks alright, though I'd probably make the mince into more of a slurry before forming it, whether or not it would hold it's structure as well I'm not sure.

I'm pretty sure a bain marie is a bowl with the food in, within a bowl of hot water; ie the food itself isn't sitting in the water. Though I'm not sure if it's both bowls, the technique or just the big bowl that is named as such.

I believe the term is a bit looser than you think. It simply is "cooking via a hot water bath", regardless of containers.
 
I tried googling that, seems they used to be sold in gadget type shops. But all seem to be discontinued now.
I so want one.

Ah you're right, seems the cheaper ones are pretty hard to get hold of. The only ones I could find were in the region of £500+ (for a miniature doner machine!). Which is definitely a little over budget for me, since I'd only use it once in a blue moon.
 
I seem to remember seeing a segment on the F-Word or something about lamb donor kebabs being made, they were using really good quality lean meat IIRC. However I suppose that really depends on your local kebab shop and their supplier, there is probably a large spectrum of donor meat quality.

I used to work for a firm called Brenntag, that amongst it's other businesses supplied food products. I recall one of the sales rep's telling me that he was off to a doner meat supplier one morning, as they were trying to find some sort of filler to get the meat content down from the already startlingly low 5% they'd achieved so far! :eek:

Glad it worked out well :) The 2nd photo does look pretty horrendous as is but I'm sure the final product was damn tasty. How did you find the whole process?
 
Yeah the sauce like thing on the outside of the meat was just fat that had solidified because it's wrapped in clingfilm. The juice obviously couldn't run out properly. Whipped it off with a knife shortly after the photo and then seared the rest.

Even with that, I bet it would still be healthier than a normal kebab. :P

Cooking it was fairly fun, just bought minced lamb and blended it in my food processor. Simple enough, don't really need a mincer to be honest.
 
If you guys are horrified by that you really need to see head cheese sometime *vomit smiley*

The above is really not that bad, and no worse looking than actual takeaway doner kebab meat slabs.
