***Hot Sauce Thread! Cor, wehey missus! Oh wait, I mean for food...***

You should try some Holy **** sauce from (www.theribman.co.uk) it's made from nagas and it really tastes fruity because of it. I love adding it to sauces and I've had it just in sandwiches and the like and it's awesome.

I've also got some I bought from the German super market; one is a red habenero hot sauce, which is nice but not massively hot compared to the above.

I also have one called Painmaker, which is bloody hot. I put this in my dinners, but it pretty mean. It only says it's 200,000 SHUs but feels a lot hotter!

Think I'm going to order some more though thinking about it. Will look at some of the above... :)
 
Aye that Franks redhot stuff was dissapointing.
I've got a few bottles of daves insanity sauce as well as a random selection of other hot sauces.

One of my favorites taste wise has to be the Creole sauce from the company that does square bottles, yeah so imformative :p

I'll get some pics when I get home tonight :)
 
I often frequent chilli festivals in the summer, in particular the one in Chichester and last year there was one in Bournemouth that I attended too. It's a great way to get out there, try sauces before you buy and more often than not speak to the creators of said sauces to get their take.

Last year I picked these up:

Mostly naga based, but not as face meltingly hot as you would expect. With the exception of the "Who dares burns 2nd assault" which I bought solely for comedy value. I can safely say there is no culinary value in this sauce, whatsoever. :D

My "ketchup" hot sauce of choice is Dave's Temporary Insanity sauce, it's nowhere near as hot as normal Dave's but gives a nice kick. Works brilliantly in chili con carne, and mixed with mayonnaise is an awesome accompaniment for the trusty bacon sandwich.

In the pic above, there is awesome the Hot Headz Con Queso dip which is a beautifully smooth cheese dip for nachos and such. Good building hab heat, with the smoothness of the cheese to tame the fire.

i think tasting before buying a hot sauce is essential, i buy them randomly because that is the only way with supermarkets and as many "hits" there has been "misses", you really need to find ones which suit your "specific" taste.

a chilli festival would obviously be ideal for tasting, the cost of the ticket would be redeemed by not wasting money on sauces you dont like.
 
Been to that chilli festival in chichester before,can definatly recommend it! Load of stalls,good to try before you buy too.
Got a few sauces there,but the one i remember the most is one called "Heart of the Sun".....boy that one left scars! :D
 
I've got Dave's insanity sauce, and the ghost pepper sauce. I end up using them instead of chilli powder in all sorts of cooking. They are also fantastic with cheese on toast :D Dave's ghost pepper sauce is supposedly around 260,000 scovilles.

I've also got some 'Dorset Chilli Farm Naga Jolokia' sauce which is very nice. A drop with scrambled eggs sets you up for the day.

The hottest thing I have is some whole dried Naga Jolokia chiles. I've made chilli oil with some of them, but can't work out what to do with the rest. They are stupidly hot even compared to the hot sauces. The hottest of them can apparently go over 1,000,000 scovilles, and having hurt myself quite badly with a small piece of one of them I can believe it.

My first taste of insanity sauce completely rearranged my view of what is hot. Tabasco was never the same again.

I've had Dave's insanity sauce in the past and even used it as a dip though it doesn't taste all that good. I currently have a bottle of Dave's ultimate insanity sauce on the go and though it's great for adding heat to things it's taste is worse than the normal one. I made the mistake of using it as a straight marinade on some chicken and it was barely edible and really hurt on the way out.
 
Stocked up with another bottle of habenero tabasco today as i've started going crazy adding it to pretty much everything :D Was tempted to try something different but decided not to
 
Arrived today was two bottles of Mad Dog BBQ Sauce, one original and one chipotle smoked.

Butterflied a few chicken breasts rubbed in the chipotle sauce and let soak for an hour, Heated up a cast iron griddle pan and away we went, applied another coat of sauce half way through. The coating went dark and sticky. Was very very nice, not too hot but very flavoursome.
 
I took a trip to Tesco and got some Dave's Insanity. I see what you guys mean, it just tastes like incredibly hot paprika and not a lot else. Will be good for chilli boosting though!

Nando's supermarket sauces ain't that good, the ones they have in the restaurant with garlic and herb, etc are a lot better.

what do you guys actually use this Insanity sauce for? i use my chilli sauces for things like chips, burgers, pizza's, etc.
 
Yeah, a mate at work has recently gotten a bottle of Daves to put in soups etc, and I have to say, it doesn't smell of much, and other than a strong paparika taste, doesn't taste of much either. Much prefer my Blair's After Death, it may be less hotter, but smells so much more potent. Definate chilli taste to it too.

If you're a fan of plum tomatoes on your fry up, this stuff works wonders on them. :)

Totally agree, it's OK on it's own but the peppery after taste ruins any semblance of proper heat enjoyment. Try mixing it up with some mayo to bang on chips, or as mentioned a bacon sammich. Coupled with your home cured bacon and home made bread I reckon it would make an awesome snack.
 
For those more into flavours than heat, I got some sauces from http://www.uptonchilli.co.uk/sauces/ a few months back and whilst not necessarily overly hot, they taste absolutely sublime, I couldn't recommend them highly enough.

I got them at a craft market where you could taste all of the range, my personal favourite was the Mango, Lime and Habanero.
 
Does anyone know how to make a (nice) chilli sauce like those upton chilli sauces?
I have a feeling I'm going to end up with far too many jalapenos, tabascos and scotch bonnets so I might as well do something with them.
