how can i overclock to 3ghz?

The 800mhz CAS 4-4-3-15 version will again be fine for a quad-core. I wouldn't be at all surprised if it can do the same speeds as the PC8500 CAS 5-5-5-18 anyway.

think i will go with the 1000mhz version as i can get it from a competitor at a cheaper price than the 800mhz version on overclockers
 
I am newbie too, with a P5k and a e2180 and i want speed right here right now :p
If i go to the bios in my P5K and i change:

- multiplier to 8
- Vcore to 1.38
- fsb to 400

should it work?
If the fsb is going to be pumped up from 200 to 400. Would not that require to increase the board voltage?

That SHOULD work, if it doesn't.. up the vcore a bit.

But really you have a E2180 with 10x multiplier, use it :)

3200 : 10 = 320Mhz! (less stress then 400Mhz)
Now you have to watch your RAM speed:
for gigabyte motherboards:
320Mhz x 2.50(4:5 in other motherboards) = 800 (use this)
320Mhz x 2.40(5:6 in other motherboards) = 768
320Mhz x 2.00(1:1 in other motherboards) = 640
