How do you hold your steering?

I don't hold it I'm to busy smoking, changing my tunes, adjusting my hair & looking out at the Peasant pedestrians I have to pass.

Or 20 to 4 or there abouts.

Have a look in a book store for the Roadcraft: Police Drivers handbook, and give it a good read. If you understand the principles behind it and think you could apply them, look into the IAM websites. Most local groups (I've seen a LOT of towns covered) seem to have meets most weekends, and IAM instructors will just give you an observation ride and then give you an indicator on what you'd need to do.

I'm not sure on lesson costs, but IAM is something I'd also like to do.

Yes and you're changing gear loads more in anticipation for hazards, not changing less the IAM way.

Anyone notice people who dip their left shoulder when they're driving? What's that all about?

Or the people who drive with both arms stretched out and 11 and 1?

2:45 & 9:15 here regardless of where i am driving. Another strange one to add that i've seen people do is both hands at almost 12 o'clock, usually this one also comes with sitting with their seat so far forward that if the airbag was to go off it would hit then in the face!

Very precise :D

No hands! LAWL

Cosworth = one hand in the 3 o clock position and arm resting somewhere on the door

Westfield = 10 to 2

Left hand at 9, right hand at 3 pretty much all the time.

Feels pretty comfortable. Might rest my right arm on the arm rest too. My arms are too short to rest them on the centre arm rest :(
