How many HDDs

SSD for OS
SSD for games
SSD for software
HDD for backup
HDD for media storage
HDD for media storage

Yep. 6x SATA connectors or 4x SATA connectors plus an M.2 SSD.

You could buy a PCI-Express SATA card though if you wanted more.
 
Man, that must be loud. Have you considered getting a NAS ? Then you can place your hard drives out of earshot

I have a similar setup, 8 various sized disks merged into one drive gives me a single 25TB or so volume. It's in a cupboard though. I use it to stream MKV files

The Intel ports would be preferred, but how good do they need to be for a mechanical drive?

If you buy a SATA expansion card there's a fair chance the chip on it will be a Marvell of some flavour.
 
Stick the media drives on the marvel ports seeing as they don't really need speed or response times.
