i have rogan josh or jalferazi most of time then when feeling brave a phall
 
Fish curry, speak to me.
Should I marinate the fish in my sauce for a few hours and then quickly fry the fish? Or should it all go in together over a very low heat and slowly cooked?
I'm pretty good at meat curries, and sauces (will post a recipe later on) but never made one with fish. I don't want to ruin it.
I have some cod to use tonight.

i have never cooked a fish curry, but i would remove fish from marinade.
heat the marinade and then put fish back in and let cook.

Just making this now! I have to say that it both smells and looks fantastic! I'll leave some feedback on the taste once I've shovelled it into my gob.

I live relatively close to Brick Lane and since the curry has gone down hill there over the years I am hoping this could be my curry fix salvation! Luckily for me I can nab all the ingredients virtually on my doorstep.

I love curry like I love turtles. Actually I wonder if there is a turtle curry recipe?
 
Made this tonight, it was nice but seemed to lack the taste you get with curries from the takeaway.

I used ghee instead of oil, would that have made a big difference to taste?

Seemed like there was very little spices, tsp is a teaspoon isn't it? :o :p. i might try adding a bit more chilli, curry and cumin next time.

hi mark. the first couple of times i had this, now i do a double batch everytime and it seems much stronger in flavour.
i made this last weekend and it was 100%, then i made it yesterday and it was about 90%.
also the amounts are just a guide, i use heaped teaspoons. its really how you cook it.
also dont forget salt, it does make a difference
i use oil, not ghee.
also mark. if you look at the pic on page 1, you will see the oil seperates while cooking, this also makes a difference in taste
stick with it, when you get it right, it is really nice.
i have tried dozens of different curry recipes over the years, and this is easily the best i have tasted for a home cooked curry
