101 : you steam vegetables - brassicas/root-vegetables to avoid leaching out the good stuff and not over-cooking (Gen air-fryer probably haven't heard of that though)
lentils and pulses they need simmering though after you have sauteed and spice infused some starter veggies - 2KG of dark speckled/puiy lentils in this months S&S
 
The alternative to sous vide is a temperature controlled hob. You can boil water to the exact temperature and no need for a bag. You can also fry a steak at the exact temperature too but frying a steak at 60c will take forever since you are only cooking from 1 direction as opposed to 360 degrees in water.

Call me an idiot but aren't all hobs temp controlled?

The thing with sous vide is the vacuum though, you can add all manner of lovely spices in to the bag, vac it and the spices will draw in to the meat, it's lovely.
 
Check out preserving/pickling. The Romanians love it, and apparently its really good for your gut.
Yeah this is when I get heartburn,.not from super hot spice but letting my good bacteria go to pot, weirdly though I don't really like veg and this causes much confusion when I tell people , this last curry was Holland and Barrett soya chunks, onions obviously, mushrooms, mixed peppers, passata , tamarind paste then all my spices ( work in progress)

Honestly rob get yourself a sous vide. They take your cooking to a whole new level.

That is the first time I've seen one of their video's that they haven't smothered everything in salt, pepper and garlic and then finished with a taste test /
 
Got a tyre for my old Mongoose as fam visit imminent and they wanted to hire bikes so done a bit of maintenance on them.
The tyre felt too easy to put on, it's blown up ok but guess I will find out if it comes off and I face plant the Camel trail
Don't like the Mongoose tbh I weighed it at 15.5 kg once, too heavy, keep planning an ebike but my planning stages can be very long
