Pastry

pinch of salt
plain flour 4 oz
an ounce of clarified butter
a couple of tablespoons of water


Filling

a pinch of salt
tablespoon of oil
a pinch of turmeric
finely chopped small onion
teaspoon of mustard seeds
a teaspoon of chopped corriander
4oz of boiled potato (cooked that is)
an inch square block of ginger finely chopped
a couple of green chilli peppers finely chopped
4oz of frozen peas (where would we be without them)

Make up the pastry and divide into 4 balls then roll til as thin as possible discs. Cut each disc in half.

Drop mustard seeds into the hot oil in a pan. Add the onion and fry til they start to brown then throw everything else in and cook for a few minutes til it's all heated through. Let it cool a bit.

Do your best making the cone shape with the half round pastry and add the filling, sealing it with water.

Deep fry them in batches til golden, my pastry bubbles up a bit as well.

you don't necessarily need a tandoor to make naan bread! traditional punjabi method then yes.. but can also make do with with a standard hot plate and grill :D
 
imo the crap you get in most restaurants and 'bucket' places is not proper indian food!!! (as some have already pointed out)

surely it tastes nothing like the original, it takes about 45 seconds to make a nan inside a tandoor
