Is Plex still a thing?

I still use Plex daily... (I also run JF too, its coming along, but it's still not completely there yet)

Even though I'm a lifetime Plex Pass holder, I'd voluntarily pay £2pm or some extra token amount to help the continued development.

Plexamp is overdue an update, but it's actually my preferred desktop music app at home and at work..
And remote streaming is great, adding people by just asking for their 4 digit code off their TV/Streaming box and getting them added is how it should be..

Their photo's app died didn't it? I thought it was fairly decent, but since I also run immich, I'm covered in that department, I only keep photo's in plex for those would don't like too many apps in the family.
How'd you get that graph?

Have been using Plex daily for many years as our primary source of TV, movies and music. generally it's just direct play to an NVIDIA Shield Pro but occasionally remotely to phones/tablets, especially when on holiday with internet access. I have shared my libraries with family/friends but their usage of it has dwindled to nothing. Also picked up a lifetime Plex Pass some years ago for peanuts and haven't looked back since. Have a large collection of ripped CD/DVD/BD/UHD's stored in separate folders on the "Server" but just displayed as grouped libraries in Plex for ease of use. I generally favour UHD's or BD's for most things now for maximum audio/video quality.

Honestly can't imagine using anything else at this point as it works so well for us

Much the same here. I've given a handful of friends access, but the only one who really uses it now is my brother.

For those ripping DVDs, where do you buy them? It doesn't feel cost effective versus streaming subscriptions.
Depends how many you want to buy. Some of the stuff i have i couldn't find on streaming services at least not without subscribing to multiple and even then the series/movie in question isn't always available. I have a lot of older less popular stuff, and just my old DVDs from years ago i no longer need to keep them in the living room, i threw the boxes in the bin and put all the dvds in wallets so they take up no space in the loft.
To answer your question, where ever is cheapest or has what i want, that could be ebay, amazon or cex.

I tend to only buy used UHD and BD's (and music CD's!) now but it's generally eBay, CEX and similar...the occasional charity shop. As above, where ever is cheapest really. I've not done the maths to work out if it's cheaper or not and honestly it's not something I'm interested in either. It's certainly not for everyone but for me, there's no downside. At the end of the day I get maximum video/audio quality without being reliant on an internet connection and in theory also have maximum choice without being at the mercy of one or likely multiple streaming services to get access to the content me and my family want (barring a few oddball things that have no official physical release; e.g. Tetris). We don't care about watching new shows as soon as they air so it's not an issue waiting for a cheap UHD/BD release. lol there's always something else to watch in the mean time. Storing the things after ripping is not ideal but I just have some large plastic tubs in the loft to store them in.

EDIT; I will add as well that I appreciate having everything available in one single consistent interface too instead of bouncing between multiple different UI's for various streaming services

There's the user interface as well, all the streaming platforms have their own take on how to handle the UI especially when it comes to user profiles, and some significantly worse than others. Then things like device limits for downloads, at times laughable quality not to mention the expense of running 2+ subscriptions especially if you want UHD/no ads.

I have a Verbatim 43888 that has one of the Pioneer BDR-UD04 drives in. They were highly recommended a few years ago because they supported Libredrive and read almost everything. I've had zero issues reading any CD/DVD/BD/UHD with it. I did have to get mine from Germany and I see that more recent versions might contain an LG drive that doesn't have Libredrive enabled.

I use a HP EliteDesk/Lenovo M920x for my Plex server so the USB form factor was ideal here
