No i specifically close all apps when running a game.

Same keyboard and mouse, comes with the Bluetooth adapter. As barebones as you can get.
In that case, I'd try a basic PS/2 or USB keyboard and mouse. You checked the Windows slideshow background thing, right?
 
You need to run performance monitor while gaming, then look back at the logs/data for when the issue presented itself.
 
With consoles you at least can say it's X causing the problem (the potential avenues for causes of problems is slimmer), with PCs you have to break things down, spend time isolating causes, but frankly it's the nature of gaming on a PC. I can't run the lastest branch of AMD drivers for example, the drivers just constantly timeout and fudge things, i'm running a major version behind without issue. My Dell monitor is really buggy running over Displayport, my mobo has some weird issue where the onboard audio isn't present (usually resolves after a reboot or two), the other house PC randomly starts itself up if we use the USB passthrough ports on the monitor, it's a mixed bag of weirdness running a PC (sometimes it just works), but it is what is.

Honestly i can't remember the last time i had a PC that didn't have some obscure quirk or bug i had to be aware of.
 
Bluetooth isn't as barebones as you can get, use a wired keyboard and mouse.

If someone have a number of other BT devices in the same room, they could have a latency or possibly interference issues.

If the BT mouse/KB/adapter are the common components to all three systems, they must be the culprit.
 
If having a Logitech Bluetooth mouse and keyboard makes my games drop from 140fps to 6 FPS there is something very wrong with windows.

I'm planning to install windows 11 tonight, just to see what it's like.

No windows slideshow, this was a fresh install. No customisation just want to play games!
 
As they’re G Sync monitors, are you limiting the FPS to just below max refresh rate of the monitor, and enabling v sync in Nvidia control centre?
 
If having a Logitech Bluetooth mouse and keyboard makes my games drop from 140fps to 6 FPS there is something very wrong with windows.

I agree that bluetooth peripherals won't interfere with framerates, however I did notice some input stuttering on my PC when my Logitech Unify receiver was plugged into a USB port next to my WiFi antennae. I moved the receiver to the front USB port and the input stuttering on mouse and keyboard has completely stopped. WiFi and Bluetooth can interfere with each other. I don't think this is a solution at all, but if you have your receiver next to WiFi antennae, you might want to move it away anyway, to reduce the possibility of this causing you issues in future.
 
Well the way I see it, if someone has gone to the trouble of building 3 full systems, and multiple windows installs to try and fix an issue, trying a wired KB and Mouse shouldn't be a massive hardship in comparison.
It doesn't mean you have to commit to using those devices moving forwards, it's just a troubleshooting step.

As for other ideas, have you used completely different disk drives and cables each time? Dropping from 140fps to 6fps is the sort of thing I'd expect to see when you have an I/O error or something (can be caused by dodgy cables even if using SSDs).
 
Never had this issue and had plenty of systems, as said already, there must be common denominator, software you are installing or hardware you are using.

Just to be clear, you mean that you used the same m.2 drive in all three builds?

In your OP, you said you have 2x 1TB SSDs, are these both m.2, then?

Yes always same keyboard and mouse.

I'm using either Nvidia overlay or afterburner

Funny, my first reaction was to suggest this. Or try a stripped Windows build with as much as possible disabled: Defender, Search, Store, Apps etc
Because it must be Windows background activity related.

Literally upgraded to 32gb today. Going to test it out but did a benchmark and got similar low FPS at times

It's unlikely, even with 8GB and a 5400 RPM hard drive hitting the page file in games didn't have a dramatic impact for me. The only exception was leaving Chrome open while gaming with a bazillion tabs open, that could lead to a wait of minutes.
