Knife sharpeners

Can anyone recommend a knife sharpener?

I currently have a Minosharp which is fine... when it's working. The stones are incredibly weak and I'm through my second set now after barely any use and I think it's time for a different solution.

My knives are all seriously out of shape now, so I need something that will regrind them as well as sharpen.

It sounds like they're in a bad way, which leads me to think that nothing you can safely use in the home will bring their edges back.

You need to have them professionally ground to bring them back into line and then use something on a regular basis to keep them keen.

Or just buy a new set of cheap-ish knives which you can give a good hammering. There's only so many times you can get an edge out of a knackered blade before it gives up.
 
Coarse, medium and a fine whetstone should be able to do pretty much everything except reshape.

Speak to your local butcher during a quiet period about getting the knives redone. may be able to help out.

Ditto I worked in abattoir for 6 years as a butcher , whetstone and a smooth steel used correctly will make any knife super sharp.

Its all about not banging your knife against the steel , softly softly pretend your making love to your knife ;)
 
I use a Lansky kit for all my blades, can get them sharp enough to shave with if you so wish, and also re-profile a blade depending on its use.

No butchers around here and the gypsies don't come round to do it any more either.

There are a few companies locally that still regrind knives, but they've done me 11 years now, so I'm considering a new set. I can't argue I haven't had good value out of them, anyway.
 
Knife sharpener would be great, but I'm not sure I trust them. Would make life so much easier though.
Does anyone actually have really good knifes and use such a device?
 
Posted in last thread about knife sharpening, be careful if you get one..... :D

Sharpening used to consist of using one of these http://www.scobiesdirect.com/ItemInfo.asp?ItemDesc=Whetstone+Knife+Grinding&ItemNo=WH00001 until you got the edge required (looking for one single fluid motion across the stone) followed by a fine sharpening stone and then a couple of rubs on a steel. Then just general steel rubbing to to keep the edge on them.

If you werent careful with the grinding machine you could easily destroy a knife. Boning knifes used to last around 6-8 months before they were too thin to use or sharpen easily, steak knifes got replaced most years. Cleavers lasted for ages.
 
Ordered a cheap 2 sided whetstone off amazon to try sharpening knifes but wondering do i need a cheap steel as well?

Did have a kitchen devil sharpener for a fiver before this 6in thing where you hold the black grip and on the end is 2 little things u run the knife through but i dont think its doing its job well i mean its made the larger knife i have a bit sharper but not all of it from tip to handle. So trying the other stone and maybe steel way.
 
I use a stone, works perfect for me. A couple of strokes on either side before and after use (obviously wash the knife to remove dust :)) and I always have a keen enough edge to cut tomatoes with should I want to.

Edit - forgot to mention that this isn't my main knife, I use a cheap victorinox serrated one about 75% of the time, works wonders unless I want to chop quickly

its not so much about the sharpner but the technique you do it

check google for some good video tips
