When I tried to install my new m2 drive a few months back, was getting some weird goings on where W10 would not boot unless I had another of my SSD's connected.

Have just downloaded a free copy of AOMEI Partition Assistant to try and get to the bottom of what is going on. Image of the current state is below

What would be causing this issue?

Would I be OK in getting an imaging software (am thinking Acronis) and doing a clone of the C drive onto my m2 and all should be good?

Sounds like your boot partition (Mbr) is on another ssd. Try booting from the win10 media and doing a boot repair with all your other disks unplugged.

You will probably have to reinstall without any other drives plugged in.
