Making beef stew less boring

Mustard, wine, beer, stout, horseradish.

Add pulses if that's your bean, pearl barley works well, pasta, dumplings.

Stew rocks, probably my favourite meal.

Turn it into goulash with paprika and a tin of toms.
 
Make your own stock if you're currently using stock cubes, trust me it tastes much nicer to have it fresh and home made rather than crumbling a cube into water :p

Something that I think goes really well is some peppercorn, either black or Szechwan. Peppercorns are commonly used in very similar foods in China and it adds a nice taste and not overpowering spicy tang to it.
 
another thing that you can add is a table spoon(or 2) of Good quality Balsamic Vinegar, when cooked out it gives a subtle sweetness to the stew
