Making Different Sections On Drive?

Right my mind has failed me so i have forgetton what it is called but currently i have 1 sector on my hard drive which is C, how do i add others? is it possible to give these names? or is it letter only?
 
They are called Partitions and yes they have drive letters and you can name them, you can make partitions in the Disk Management Console built into windows.

what size should i make the OS partition?
i am thinking of going with 1 for OS, Apps, Games and My Stuff (all my data that doesnt fit into other partitions)

would this be good?
 
How much will you need to be installing (apps/games wise)?

Remember there is a performance benefit with keeping the system partition smallish (if you will be installing lots of Games/Apps on partitions after it). Having said that, you can always use 3rd party software to re-size them if necessary, so nothing is really permanent.
 
You can also create another partition for games in addition to the OS / apps and storage. These waste a lot of space on an OS partition and just add to fragmentation in the long run, and increase the times need to defrag. As mentioned already you want the primary OS partition small while leaving overhead as it will store the data at the head of the drive which is the fastest region of the platter. Exactly what size you want the OS partition depends on how much stuff you plan to install. I'd keep it simple and store your movies, music, photos, etc on the storage partition and you'll typically be looking at 20 GB-ish space used for OS / apps, so double that or more should be good.
