With all that space you could have a dedicated little room for all the AV kit and a window on it for the projector to shine through like in a real cinema - then there would be no fan noise from the projector and all your kit could also have dedicated cooling in there too .

Rather than trying to sound deaden all of it I would focus on one end being your cinema end. Projector from wall to wall across the width of the room. Big epic sofas with large rugs on the floor to help soften it up. 7.1 will give you a really nice area of sound.
Oh and definitely need a pool table. A bar. Art work on the walls etc. Don't forget some hue lighting to really set the mood.

What pool table? US 9 ball or the cream of the crop, the English 8 ball table. The classic reds and yellows.
Looks like a fantastic space and am sure you will get a lot of enjoyment out of it.
One thing I would suggest, still in line with your bang for buck policy but on the higher end. Try and squeeze a 4k projector into the budget. I bought my 1080p Sony projector about 2 years ago and whilst its fantastic most peoples main reasons for not getting 4k (aside from price of course) is lack of content and unable to tell the difference on whatever screen size they choose. Content is now coming along since 4K Blu-Ray has been officially released and most of the big new released will be arriving in this format plus even going for the smaller end of a PJ screen say 90" you will definitely notice the difference.
Wouldn't necessarily suggest a Sony as they are still around £5k for their cheapest 4k but look around for cheaper alternatives as it will be one of the biggest things you can do as far as future proofing go.

I agree, for my money the only real benefit of 4k/UHD over 1080 HD will be on extremely large screens or from very close viewing distances (like laptops). I wouldn't want to argue against the need for super HD quality video (to make decent VR a possibility we'll need it), but 4K on a 40" in a normal living room is dubious.
I still think a really good HD projector will be fine, but definitely go UHD if the budget and intended screen size will stretch!
