I think the steak would only really dry out if you left in a box of salt and for 24 hours, only an hour before cooking with oil there is nothing to worry about. Just a few turns of the mill.
 
The ONLY way to cook a steak is in a cast iron skillet, preheated to 250 degrees. Season and oil the steak, let it sit for an hour, then throw it into the skillet, 2 minutes each side, sit for 3 minutes and devour.
 
I had steak cooked for me last night, and the girl who did it is marriage material, lol.

Rump steak, and cooked impeccably well, medium-rare, but on the rarer side, really pink in the middle :D

When I do the return steak dinner, I'm going to employ all these tactics like salting and whatnot... oh, and serve with bernaise sauce, nom nom!
 
I just orderd Buccleuch Fillet Steaks. Some of their lovely sausages and blackpudding and a couple of steak burgers. My god their meat is fantastic. Some say the best in Britain.

I cant wait for this to arrive.
 
Bit too brown for me, but i use a similar method for cooking mine :)

- Heat pan, add Garlic-Infused Oil (love garlic).
- Crush peppercorns across one side, and put in pan top side down (side you just peppered).
- Leave to cook for literally 2mins, whilst its cooking crush your peppercorns across the other side. Turn.
- Add chopped onions, mushrooms and a couple of cloves of garlic (i like garlic!)
- Remove from pan, put on plate next to salad, a jacket potato and some fresh bread.

I only ever cook with Fillet steak, last nights portions were £9 for 2 steaks, pretty reasonable.
