I currently have Kingston DDR-400 with CAS of 3 (thats what it is rated for) DIMMs, then i installed some GEILs DDR-400 with CAS of 2.5 to bring me up to a total of 2GB.

After that i booted up and my mobo detects it as DDR333MHz, rather than DDR400MHz. Why is this? Is it because of a difference in CAS timings?

I went in to the BIOS and changed it to 400MHz, but now my RAM all operates at a CAS of 2.5 (which is good of course). My worry is that will my Kingstons die because they are operating at a CAS of 2.5 rather than 3?

Is there any chance of damaging my hardware by forcing my RAM to do this?

Probably, wouldn't worry yourself too much about it though. Run some stability software like prime and memtest just to be sure it's stable though.

No you won't damage anything, windows will reboot / freeze / BSOD at most.

Do you have all 4 sockets ocupied?? that is probably why it is default to DDR333 for better compatibility.

It's good now you have all 4 sticks at DDR400 Cas2.5. Now you just have to run some memtest to make sure it is 100% stable.
