Sounds like burnout. You'll have to set boundaries to protect yourself because others will just keep piling the work on. Start by being half as productive to make them hire more people.
Someone said at work one day at least we've not working in a factory. I said it's exactly like working in a factory.
The way I got around this was by automating the repetitive jobs. Which freed me to do more interesting work. I also moved laterally away from projects that never finished or from people who created these kinda work flows. I switched to smaller projects which had a much shorter timetable.
