Do you have to marinade the chicken in the sauce or something else, and add sauce at the end.
[How do they actually cook it in the restaurant itself - pre-steamed to kill salmonella variants and cooked/re-heated ]

I thought KFC tv expose series was pretty good, but maybe Nandos would be embarrassed to show back of house (like the apple sweat shops)

Marinade before cooking (but as it's highly acidic it doesn't need long). Stick under the grill, add some more sauce, turn over, add more sauce. Use chicken thighs and cook until lightly charred. I often use skinless boneless chicken thigh fillets to great effect.

In Nandos they pre-cook the chicken then cook it over a hot grill, repeatedly mopping it with the sauce.

wagamamas, GBK, three brothers Burgers, Turtle Bay, Giraffe, Grillstock, most pubs.

all far better than nandos.
 
I like Nandos but it isn't Portuguese. It is a lot more savoury in Portugal and more about the smokey bbq spice rather than the cream and sugar taste it has in Nandos.
