My only problem with doing this is they aren't upgradable. When i need more storage in the future, these will be left useless wouldn't they ? Becuase buying another one would give me 2 separate 'servers'.

No reason why you can't open up the drive and stick two new drives in it but obviously you void you warranty instantly.
