Need to replce externals

Want to buy two new drives, one 1TB and one 2TB.

Planning on buying standard internal drives and caddies. Most probably this one based on previous conversations.

Most important are being quite and being reliable. Likely to be on 24/7 and heavy usage a lot of the time. Only going to be used through USB2.0 so huge speeds not a problem, any SATA2 will be more than sufficient.

Sure I've heard good things about Samsung Spinpoint. The 1TB F3 version a good one to go for? Nice and cheap, although that can be a bit of a worry.

Hitachi Deskstar or WD Green seem reasonable for the 2TB. Or is the Samsung worth waiting for? How long is "Due Soon" likely to mean?
 
All of those drives you mentioned should be fine. I have a 1tb Spinpoint F3 and the 500gb F3 Spinpoint and they do get great reviews, and the WD greens have great reviews as well. For USB 2.0 storage, I don't think you'll gain anything by waiting for a "faster or better" drive....Just make sure you have everything backed up. In fact, for external drives, I have a WD Mybook, and a Lacie 1tb, both have good warranties are cheap and fast.
