New build - spec help

I'm going to build a PC (first time) around when I get Win 7 at the end of October, but can't decide between Intel/AMD and nVidia/ATI. It will be for gaming, general internet/office use, maybe some photo/video editing aswell. I currently own a laptop 2 years old so anything will be a big step up in performance for me;).

So far I've made this spec list:

I was also considering the AMD Phenom II 955 & ATI 5850/5870, but I was thinking maybe the nVidia GTX300 series might be better.

Will that Arctic cooler be good enough, if I did some overclocking?

Finally I'm not sure what I'm looking for with the p55 mobo's so I picked one that I heard a lot about on this forum, so can anyone can suggest a better one at a similar price?

GT300 will cost a bomb, tbh I'd put two 5850's in there - although that takes you over budget, so in that case a 5870. However if you went AMD you could save 50 quid on the mobo and then 5850's in Xfire would only put you 30 quid over.

Could you suggest a good AM3 motherboard please?

Don't really know the differences between them although they are cheaper than the Intel ones for some reason..
 
Asus m4A79xtd evo - there's really no need to go for a board able to run 2 cards at x16 when it makes about 2fps difference and costs about 50 quid more.
