An update for someone that had the same dilemma, i got the 6700xt 12gb and i can say its completely fine. The games run smoothly and you can change whatever settings you want from amd software to your preferences. Now for the streaming unlikely i cannot stream because of the internet connection that i get max 2000 bandwidth even though my upload speed is 10mbps and i dont know what is the problem on that. If you can stream on 6000bitrate you are perfectly fine. Also there is a feature on amd software that you can stream from there and the quality was much better.
From the charts posted the differences are a lot more than 10%. You wont have any problen doing the things you want to do with the 6700xt. Finding the right setting is exactly the same running nvidia as it is with amd. Both will work with settings the software chooses for you. But you will get better performance with both nvidia and AMD if you change a setting or 2.

depends on res and game. it will be fine at 1080 for many years yet.Yea and 8gb VRAM in 2023
