What motherboard?

Most boards have cooling plates for M.2 drives and to remove a heatsink from a drive will probably void the warranty.

You can get cheaper drives, but not sure if they are suitable for the tasks you mention.

2 x alternatives to consider. WD is slightly faster and cheaper, Samsung is latest model and faster. (both have no heatsinks though)

you have space for 2x m.2 drives (one of which is mounted vertically)
these are pcie3.0 slots, so won't use the full bandwidth of the latest pcie4.0 drives

Crucial P3 gets my vote. For the money its a great drive. £200 for a 2Tb gen 4 drive is a lot of money. When they are on offer you can normally pick them up for around £120.
