Nokia phones in 2010

Not really - it's what all of the applications on the phone run on. It's like Android or Windows Mobile. You can compare it to Windows XP on a PC

The default browser on the N900 is (rather confusingly) called the Maemo Browser and this is based on Firefox
 
So what does my 5800 run on now, something similar, just not so sophisticated?

It's somewhat more powerful, versatile and prettier than the Symbian on the 5800, N95, N97 etc. It's just very young and Maemo 5 is only on this one phone for now
 
I think that if the Symbian revamp doesn't happen relatively quickly and bring some more stuff to the table Maemo might start to edge in on its territory...at a glance Maemo does seem to be vaguely reminiscent of some incarnations of Symbian, but having played with an N900 it seems to do it better...

Putting it into context, S60 is like running Win98se back in the day - newer stuff was available but it's as stable as you like and does what you want. Maemo 5 coming along is like XP being released; it's just better, looks better and uses the hardware better, though it wants more resources to do that. It is a good OS and feels more like a desktop OS than pretty much every other phone I tried, but it probably isn't for everyone at this stage. You don't need linux knowledge but it doesn't ship with a manual either.

The big revamp (Symbian^4) is coming this year. It's a brand new UI based on Qt. Writing rich, graphics-based applications on Symbian will become a lot easier.
