Tri tip steak that has been salted in the fridge for a few days and home made tandoori chicken ready to go on the BBQ later.

Going to make a chilli mango salsa and some home made naan to go with too. Nom nom.
 
I've just opened the doors to check the fuel and water levels and noticed that the condensation on the doors is brown in colour, should I be worried?

Mine is brown too after 4-5 smokes. Will be fine.

In all honesty it was impatience that got the asda coal in today (as it was mainly for a burn in). I have some shells already on order for longer cooks :D

My Project Q came on Saturday so thought i would give it a little run out. I didnt have time to actually prepare anything or even attend it so just put some butt rub on a pork shoulder, put it in the smoker at 12, left it and took it off about 7pm.

I was little disappointed that the handle on the top door of the smoker is rusty. You don't expect that from a new product but its not that big of a deal that made me want to send it back, also, i find the hinges do not align exactly so makes it a bit tricky to clamp together.

With a bit more time to actually prepare before and after i can see some great results can be had.

The top of the butt was a bit dry but the bottom half was fantastic, just melted away when i was shredding it.

A few thoughts on the Project Q

The bottom door is really hard to put extra coals into, the water tray kind of hangs down at least 1/2 the way over the door so getting your hand into the pit under the water tray without touching the sides of the smoker, or the bottom of the water tray without burning yourself is tricky!

Temps held really well, i done a test on the sunday where i but 1 basket of coal on, using the minion method sp? at 12, cooked a few burgers, then just left it for the rest of the day, at 9pm that night it was on 50c. You could smoke all day with 2 baskets of coal no doubt.

My old smoker was one of those 6ft, 3 chamber horizontal units, that thing was great! but this is a lot more practical
 
You're meant to lift off the top sections to refill the coal tray.

You shouldn't have any rusty bits either so I would contact the retailer to get that part replaced (ProQ are good at aftersales support so they'll get you sorted out quickly).
 
Had some Bulgogi (Korean BBQ beef) in a restaurant last week and it was sublime. Going to try and do it this weekend on the BBQ.

Has anyone made it before? There are a few variations on the recipe.

I love bulgogi though haven't had decent stuff in quite a while. One thing that seems to be missing from that recipe is sesame oil. My Korean friend used to always insist on very high quality sesame oil in any bulgogi (and tbh, in nearly any Korean cooking :p).

Bought myself a little drum style portable BBQ for when I'm only cooking a small amount of food. Worked well and used far less charcoal than if I'd used the big one.

Did some lamb chops with a marinade made from crushed peanuts, tamarind paste, garlic, ginger, Birds Eye chilli, soy sauce, honey and fish sauce. Was pretty good but the recipe needs tweaking for another time.

Saw a single decker version of that Project Q smoker at a local garden centre, seems decent - just that with a single deck it's probably not as forgiving to temp fluctuations and for the handful of times I'd use it - probably want a selection of meats in there.

Well I tried it with some ribeye, but did not cut it into too thin strips, as I was worried it would fall through the grill. Some of it did anyway. :mad:

Anyway, it was absolutely lovely. Everybody loved it. I don't know how authentic it is in taste, but it is certainly on my list for family bbq's now. Friends can do one as it costs quite a lot to make.
 
Was going to have a BBQ today but it's miserable. I've already rubbed some pork and ribs, so might do one shoulder. Running out of wood chips though... Just ordered 40kg more online. Pear, Apple, Cherry and Plum! Should be interesting. Love applewood smoke.
