:D you’ll be choked and overcome with carbon monoxide. Cooking the burgers too much will be the least of your worries lol

Edit: oh you wheel it outside then :)

Not really. I think burgers benefit from being cooked to medium, and unless you ground the meat yourself it's quite a health risk.

I've got to say I only ever cook burgers well done, I enjoy a medium steak and have eaten burgers medium when undercooked by accident. I was of the opinion that the high fat content of burger mince, chuck or similar at 20%, tastes best when coked well done. Gloriously juicy. A burger is not the place I go for the rare experience.

Whats the wider view?

Also my burger recipe is as follows.

2 burgers

500g of chuck steak mince from butcher - coarse compared to supermarket
1 teaspoon of english mustard
1 teaspoon ground cumin
2 teaspoons smoked hot paprika
salt
pepper

I always use a burger press which gets me an approximately 75mm diameter 12mm thick burger I find the finished burger is much more stable and evenly cooked with a press than hand shaped.

I tend to be lazy with my burgers now and sous vide them before to about 50c before a quick sear, means I don't have to worry about over or under cooking them. And can focus on other bits!

Looks like the official BGE table. Very nice.
It is, I ordered from them directly as they had stock where others did not.

Homemade or assembled? If the latter where from?
It needs to be assembled but that is fairly simple, even for a thug with a hammer like me. Annoyingly they do not provide a spanner of the size needed for the BGE itself, but they do provide what you need for the table. It is presently 3-4 week delivery and arrives on a big pallet. You will need help to unload if a large or bigger size as they are proper hefty. My delivery driver was on day 1 and he was not helpful at all. I nearly told him to take it away purely because he was being an arse. He got told and complied eventually, but jobs worth at first until I helped him understand "how things were going to go".

Indeed, now sitting in a patio area ready for some work this weekend all being well.

I didn't even think about sous viding them! Personally if it's bought mince then they get cooked to well done. If it's mince I've made fresh then I feel more comfortable with a pinker middle.

It's to do with surface area for the bacteria to grow, with mince you've got loads of it, so you need to cook to a higher temp throughout, whereas with a bit of steak you've just got the outside for them to grow which you 100% cook.

Reason I do Sous Vide is because I prefer a taller fatter burger and guarantees you a nice juicy middle still when searing them off. Only issue is got to melt the cheese separately as otherwise it's still solid on top with the amount of time it's over the heat. Although I have put it in the middle of the burger before pressing before which is amazing when cooked and it oozes out!

I often make my burgers with supermarket mince the 20% fat variety, but use those cuts I mentioned when I'm going tot he butcher. I include flavourings in my burgers paprika, cumin and mustard. A lot of people just use salt and pepper. Use a little experimentation, I arrived at my preference but it may not be yours.

Is the table worth it? I'm probably leaning towards the BGE, the table looks good but also think I could DIY or mod a table for far less...
