Pulled at 163F (think it was just about to start climbing) as the chips were done and people were getting hungry! NOM! First bone literally fell out - that'll do I guess :p
 
Planned to BBQ this weekend but of course it's sodding raining till at least Monday! Still thrown a pork shoulder in the oven with my standard rub (salt/sugar/pepper/smokey paprika) and now just waiting on the results!

Of course the rain has finally stopped now I've used the oven too! :/
 
The sun popped out at the last minute but the pork was done by then sadly! Usual BBQ party food on the Weber though and everyone was very happy! :)
 
Got a nearly 2kg chunk of brisket in the fridge rubbed with salt and pepper! :)

Planning to throw it on the smoker for eating tomorrow evening but when do you think it should go on? I was tempted to chuck it on at midnight and give it a monstrous cook time just to be on the safe side. The last one I did went on about 7am and was only at 170F when I pulled it at 7pm hence the extra cook length idea.

Thoughts?
 
I'm actually using a Pro Q Frontier for this cook. The last time I did this the meat peaked at 173F using the snake method. Setting up for the minion method to see if I can do better this time!
 
That's what I figured probably happened too. I was at work all day though so no knowledge of the cook prior to getting in at like 3pm!

For now though the smoker is up and running in the side path leading to the back garden to help with the wind. Currently sitting at 286F for the grill temp but those coals were RED HOT going on. Hickory chips in foil went on top so hopefully get some good smoke penetration :)
 
UH OH! The thermometer alarm never went off and the internal temp is sitting at 217F :/

Cooked way too quickly and probably destroyed. Gonna survey the damage in a moment....
 
A bit of searching on other BBQ boards suggests I added too many hot coals during the brisket cook which caused the wildly out of control temperatures!

Reset, buy more beef (oh the humanity!) and try again! :D
 
I've changed from the minion method to the snake method recently, and have found it much easier to get stable temps. In fact I can't think of any advantages of the minion method, except if for some reason you want higher temps and can't build a snake fat enough to get that much heat going. But for 230-250F the snake works for me.

That's the thing! I got some odd comments about using a snake in the vertical smoker but it's way more fuel efficient and seemingly easier to control.
 
Got some pork shoulder and some brisket to go on tomorrow. The pork is the easy part but I didn't buy the brisket so it's only 1.5kg! Can't imagine it'll take very long on a hot smoker?

I was going to get started about 8am until I learned about it's weight. It's also rolled so likely trimmed of all fat (because fat is bad, yeah?) so no idea if it'll even be worth eating at the end of the cook!

I shall update once I've checked the fridge!
 
Well the brisket was a mess! It was a rolled joint which when opened out pretty much fell apart as lots of little chunks - very poor and won't be using that butcher again!

Luckily there is layer of fat on top so it's been salted and placed fat side down on a hot shelf underneath a pork shoulder that's had a head start.

Forgoing grill temp to get a read on both meats instead so we'll see how it goes. No pics because covered in blood + phone is a bad idea :P

I probably sliced it wrong but it was still delicious. Final temp was 190F when removed from the smoker before being wrapped in foil and a towel for ~30 mins.

Pork not long came off the grill but no pictures. It peaked at 172F - one day I'll make it to 203F. For now it's getting sliced for sandwiches :D
 
More bad times! The pork I cooked alongside the beef got put in the fridge and I just tried to shove and eat some - tough as old boots! Chucked it in the oven to bring it up to pulling temp for now. Very odd! The smoke ring though.....WOW!
 
Been eyeing one of those up for a while Psymonkee, how much did it set you back and where from?

edit: I've been weighing it up against this, which is usually at £85 but is currently at £69! It's obviously not of quite the same quality, but I have seen a few good in depth reviews from guys who know what they're talking about and it seems pretty staggering value.

I think I got it through Amazon (MacsBBQ's sells on there as a storefront) and it set me back £280 iirc! (I added a cover at £20 to as the shed was too full at the time!)

Can't really comment on the other one though.
