pesto!

Just because of this thread i've gone out bought some good quality green pesto and brown fusli pasta and added some good extra virgin olive oil umm umm...:)

excellent stuff :). I'm yet to try it with pasta on its own which will be my next avenue, and yes I will be looking for some good quality pasta to have with it. I also have picked up a jar of sun dried tomato pesto to try as well.
 
thanks for the reply picked up the ingredients but i cheated with an already made base (tesco had an offer on a stone baked margharita) and here is my effort...

the margharita base topping was so skimpy i just spread a good layer of green pesto on the top followed by a whole chopped fresh mozarella (another first purchase!) added sliced vine ripened cherrry tomatoes and chopped yellow pepper. sprinkled italian seasoning and a good few grinds black pepper.

10minutes in oven and very impressed with the results though I look forward to making my own base next using Razor-BladE recipes above (thankyou) :)

It's mozzarella cheese and look like cherry tomatoes.

Cooking time depends on thickness of your base and how good your oven is. I use a stone in an oven which reaches >270 degrees, I and I have thin bases so take ~ 3 mins. ~240 degrees normal thickness base prob 7 - 8 mins at a guess. Just keep an eye on it.

Bingo. I would have used plum tomatoes as that would have tasted nicer but didn't have any. :(
Also sprinkling some parmesan before the mozzarella tastes good.

I love red and green pesto. Tesco's cheapest (it's not a value one) is about £1.19 a jar and tastes great, as good as sacla. Had it last night. This is my pesto recipe and I make enough for two very filling meals.

Dice up 3 tomatoes.
Can of tuna chunks or tuna steak in brine or springwater, empty into bowl and mash up.
Open small can of sweetcorn.
Any pasta you like. I prefer pasta bows, and they cook the fastest too.

Fill deep saucepan with water about halfway or a bit more, salt it if you want (I do), and boil.
Pour about half a 500g bag of pasta in and boil for a few minutes.
Drain water, put pasta back into saucepan.
Empty jar of pesto into it, along with the tomatoes, can of sweetcorn and tuna.

Stir it all up till it the white pasta darkens colour and simmer very low for a few minutes stirring now and then to reduce sticking to the pan base.

Chicked, cheese and pesto is ****ing omnomnomnomnomtastic

I make my own when I can be arsed but I never quite get the pine nut ratio right :/
 
My girlfriend got me into it - pesto, pasta and capers with some grated cheese on top - such a quick, filling and great tasting meal!

Avoid the sainsbury's light pesto though, it literally tastes of nothing!

inspired i today purchased a jar of capers. intriguing to note they are tiny pickled unripened flower buds from a prickly plant :)

taste interesting, albeit quite salty. I have perhaps snacked on a dozen or so far this evening :)

what would be considered a normal quantity to stir into a dish of pesto pasta.....i'm guessing a couple of dessert spoons?

also what other uses are good for capers?

Just had chicken stuffed with pesto wrapped in pancetta with a bit of pasta and some green beans. ohnomnomnom.
 
Not sure I've ever had them or looked at them in great detail, but I always assumed they were small fish for some reason :p

I think because people normally have capers with anchovies (which is a type of very small fish) Both go so good together on top of a pizza! However to the guy who has been snacking on capers, I have no idea how you managed this they are soo salty.. more man than most?!

lol :) i was eating one at a time off the end of a toothpick though it was more of a food tasting rather than snacking. although salty i did find them quite moorish :p

will try some on my next pizza.
