OP, look on the tube map and pick a location.
Holborn is actually a pretty easy place for you both. Plenty of pubs around that area -- the Strand through to Fleet St. etc.
Failing that, go to Shoreditch. You can walk from Old Street and she can come up from Liv. St.
Failing that, stick to around King's X area. Go on google maps and use streetview.

Closes too early! 11pm closed.
It may be the case that i do just take her to the Road House. It's open until 3am.
Please not Roadhouse. It's terrible and you only go there because everywhere else is closed and you're massively inebriated. Definitely not a place for a date, it's for stag doos and nights out with mates at most.

There are some great pubs and bars off the side streets - you just need to know where to go.

Roadhouse is a good laugh, when I was "dating" went there a few times, or round the corner at Jewel. Seemed to be fine. Some places in London are a bit too try hard
