I've got two Raptor drives in RAID 0 and I want to add a third. The two I have are 8MB cache and I was wondering if it's fine to add a 16MB cache drive to the array?

yeah you can mix drives though its preferable to keep to the same make model.

depending on raid mode the array may be slowed if the drive is slower and size will be determined by the smallest drive

ie if it was a raid 0 array and you had a 500gb drive and a 250 one the array size would only be 500gb (250 x 2) and not 750gb

some one will give you a better description im sure!

Yes but with a few caveats.

1) The 16Mb drive is quite a bit quicker than the 8Mb ones so will spend a bit of time waiting for the other drives to catch up. Far from a major worry though, it won't prevent you from doing what you want to do.

1b) I assume we're talking about three drives the same size here? If not you'll lose some space on the new one.

2) If you're RAID controller doesn't support Capacity Expansion you'll need to nuke the existing array and start from scratch. Most modern controllers do support expansion though.

3) If you can expand the array the controller won't touch the contents so you'll end up with the same size of partition(s) as you have just now and some empty space. You'll need to use diskpart, Partition Magic or something similar to expand your existing partitions. Alternatively you could just create a new partition in the new space.

I have 2 X 36 GB 8MB cache raptors in RAID 0 on a P5N-E SLi mobo.

There are a few 16MB drives second hand on a well known auction site that I'm looking at, though by the sounds of it I might as well just keep looking for a 8MB version.

Not bothered about loosing data as it's only used for my OS and programs, reinstall wouln't take me long.
