RAID-0 or one fast OS drive?

Just planning the configuration of my new sustem. The C: drive will be for the OS, applications and games only with all data being stored on other drives.

Price vs performance should I go for 2 X smaller drives and RAID0 them of get a decent HDD around the 250MB mark?

As for data, I normally run 2 seperate drives which make multitasking less intensive (watching a divx while burning disks etc) would a set of RAID0 500GB drives be better than two individual 500GB drives for overall performance when multitasking?
 
I was thinking the same sort of question, and will probably go with a RAID 0 for boot / apps using the WD Caviars, and maybe a 500GB mirrored for data.
