RAID 1 Q . . .

I currently have 2 x 750Gb WD's as a RAID1 - if I dump all my data to the RAID can I then just use 1 drive connected to a SATA port in my system to read the data as just another HDD???

I'm not quite sure what you're asking here. Are you wondering if you can read one half of the mirror as an independent drive in another machine? If so I'm not sure, it'll depend on the controller but it's one of those things that you can safely try if you have 2 machines. If it doesn't work in the second machine then the first is still working on the broken array so no worries.
