Im looking to get another 500GB F3 to put in my computer and run it along with another in RAID0. I want to know if I can have two seperate volumes on the RAID0, So have the 2 500GBs in RAID0, but then split that half (one for OS and one for Docs - Helps with sync toy if the files are seperate)

If so, how would I do this? The MB is MSI P55 GD80.

Yes, this is perfectly possible. Create the raid volume as normal using the entire available space of your drives, then During your windows install you'll need to customise partitions rather than sorting them automatically.
Alternatively do an automatic install and then use gparted on an ubuntu live cd to shrink your main partition. After that you boot into windows and you can add as many new partitions as you want in the unpartitioned space using the Disk Management administrative tool.
 
RAID0 gives me ~940GB ish. Can I simply created a 240GB Partition (for OS) and then install Windows on it then simply add another ~700GB partition through Disk Management once booted into Windows? Just like I would if it were a single 1TB drive?

Yes, RAID volumes are treated exactly the same.
