I did the same upgrade (from 3500 to X2 4800). You need only one optimiser, I personally went for the AMD (horse mouth stuff 
) but as others say both should be equal.
The stockc HS for your 3000 will not be sufficient. I bought retail and it came with the HSF. I hade considered buying an Arctic Freezer 64 (OCUK have one)that will do the job without splashing much money on it. It is efficicient and silent (I do not know how close it gets to water cooling though).
I ran some Orthos that stresses both cores and the memory. 8-10 hours should be enough to check that everything is fine.
You might want to install CPU-Z that will give information on the CPU as well as coretemp that will tell you the temperatures while stressing your CPU. Very useful software indeed. I do not have the links but if you put a search you should be able to find them.
