Re-map switching between 3-2 and 3-1 exhaust?

Absolutely.
Just dont con yourself into thinking you will be quite happy swapping things back and forth more than a couple of times, because we never do, no matter how much we tell ourselves.

Motorcycles don't use OBD, you'd need an ECU specific cable and the software, which costs a lot.

See if there's a dyno place local that'll tune it for you.

Many more modern motorcycles do support ODB2. They don't all use the standard OBD2 connector however, e.g. I have to use a simple adapter for my Benelli.

To use TuneEcu on a Triumph you simply need a cheap VAGCOM style interface that uses the FTDi chipset (most of them). You can buy a cheapy from eBay for about £5 and take a risk, or get the LoneElec interface that is known to work well. Triumphs are very well supported under TuneEcu, pretty much all the factory maps are available and there are numerous custom maps you can try if you want. Obviously getting the bike mapped on a dyno is the easiest route for optimising the map.

Yeh maybe, might pass on the stubby exhaust, but still wouldn't mind playing with maps :)

Also want to see if I can find a decat mid pipe :D
