As far as I recall it has been done two ways outside of simple honesty:
1) With funds transferred to a mod who then confirmed and paid them on.
2) People posting a screenshot of their online bank account detailing their payment but blanking out account information that could be used.

Generally I'd think honesty should be enough, you'd have to be pretty low to not fulfil on a promise to pay up to charity.

the winner will either send the money to Gilly who has a special account set up, or donate on the JustGiving website. Where we can see who's donated it.

To much hassle to set it up, but if people already have an account tRBL do have a justgiving web page so they can donate that way if they wish.
