£££ RETURN OF THE SAPPHIRE VEGA 56 & 64 DEAL WITH THREE FREE GAMES!! £££

Currently have a 5820k which I want to overclock to about 4.5ghz, seasonic g550 watt gold psu, would I be able to run this gpu with my psu do you think?

currently have an rx570

Perhaps. The 5820k to 4.5ghz seems overly hopeful though, the OC/Voltage curve on those is insane as you OC (in a bad way). I ran a V64 Nitro & 6800k (@4ghz) off a 550w PSU just fine (but Power Limit wasn't changed; did some +50% PL OC too but with very low voltages <1v and worked fine). Generally had no issues if I kept the chip power <280w, so with a V56 you'll be well below that. Also have like 6 drives too and a bunch of fans.

Temps and stuff are supposed to be higher. I believe it is regarded as one of the worse Vega 56s.

For £30 more, I would still go for the Pulse.

Is the 64 better than a 1080? I've already got a 1080

When Vega launched I was unimpressed. Bought a MSI GTX 1080 Seahawk EK X, card clocked well out of the box, as I reckon the factory waterblock aided it, great efficiency as well. What I couldn't get on was the driver panel and biggest thing was shooting myself in the foot for no longer having access to Freesync. If nVidia had allowed Freesync support at that time I doubt I would have gone back to AMD GPU.

They trade blows, as resolution increases Vega tends to win, but as you own a 1080 it is really pointless to change as you'd see very little performance change.
I'd only consider the change if you can sell your 1080 for around £300 and if you have a freesync monitor.

is 500w PSU enough with X99 4core Xeon, or should I use spare EVGA supernova G2 750w
If you have the evga supernova I'd use that - I have basically the same PSU - superflower leadex 750 gold - I've never heard the fan spin up in that once in 3 years (it's passive till about 550w); powers my 64 nitro and X99 system nicely. You want some headroom with the vegas.

You're running your V64 on under 1v? I could get mine to do that on power saving bios (+50%), but wasn't sure about stability.
