The 12-25 would probably be better but an 11-25 is better than most. I think you end up with the following cogs:
11 12 13 14 15 17 19 21 23 25
as opposed to
12 13 14 15 16 17 19 21 23 25
The chain will start squeaking after around 20 miles probably just one link but within a few more miles even more squeaks appear.
It's starting to squeak as there's unlikely to be any lube in the actual joints. With your intensive degreasing you've probably removed it all and it's unlikely much is getting back in with just a quick lube. Imo on a road bike the chain needs very little attention, just a very occasional wipe down and a quick relube. Mines done nearly 3000 km without leaving the bike and I'd expect it to last the same again.

Buy any old worn-rimmed wheel. It isn't like you need reliable braking.
