I think all you can do is fiddle with the settings as you have done until you find what works for you. I've tried various ones and seem to have settled on whatever they are now.
But otherwise, the best way to learn it is to just play for fun - with mates where you can maybe try more adventurous moves.
One thing i've found, when you get used to aerials a bit, is to just go for it!! Half the time if I miss an aerial it's because I was too tentative in going for it and i'm beaten to it. I like to be pretty aggressive, it gets you into the flow more and you start nailing them more often (I find that works for me at least).
You also want to start judging the play, rather than just going for the ball - just like any sport really. Not many players seem to play for where the ball is going vs where it IS. It just takes a bit of time to learn where the ball will go - that's how the pro's get around the pitch so fast - they know where it's going before it's hit.
It's easier said than done - I am rank 42 and still get it wrong 50% of the time!!
Having comms helps with judging where the ball is and where it's going though. So you don't have to spend as much time worrying about tracking it. if a team mate can tell you as you are driving the other way for boost, you already know where to go.
With randoms, you just have to wing it!
I love the game for it's simplicity to pick up and have fun, but also complexity and rewarding experience when you improve.
I'll deff be on it tonight for a while. Got nothing else on at all!
