After butting my head for days, reinstalling everything, resetting BIOS, changing voltages, getting a new CPU, etc, I managed to get rid of the WHEA errors by letting Windows install the LAN driver. Not sure why the one I got from Gigabyte suddenly became an issue, but there you go. It was stable for about a day or two, and then it would randomly just restart - but no WHEA errors, just Kernel Power 41's. Usually when in the menu of COD BO or Warzone, again with a few browser tabs open, and HWINFO running (my standard way to replicate the original WHEA crashes). Again, back to the drawing board. Spent hours reseating everything, and even went as far as using 2 x 8 pin cables instead of daisy-chaining power for my 6700 XT (it's slightly OCed, so I guess that's best practice anyway). Again, none of this has ever been a problem before.
After days of frustration, something dawned on me after I read an article on like page 12 of Google or something: power delivery. I had a hunch, and my first suspect was the RM750x PSU. But, I figured I'd try something basic first before trying to get a different PSU: just switch out the power cable (I re-used the cable from my old PC instead of the one that came with the new PSU - a lazy mistake because I wasn't arsed undoing my cable sleeving). And it worked! Restarts stopped! I was happy! For a couple of days only, though, because the restarts, well, restarted. Next step: bypass the power adapter, and plug the new 3m cable I bought on Amazon directly into the wall socket. Finally, success! I guess my slight overclock may have been pulling too much power, and the because the delivery wasn't stable over the old cable through the adapter, the PC figured it would rather restart than fry itself.
Sometimes the answer lies in the simplest things?
Edit: currently, CPB, XMP and PBO are still on, and everything is working as intended.
