I've overclocked the 1700x to 3.9ghz at 1.3v (cant get it to go over 58 deg) and the memory to 2400 and its quick enough for me for the time being. Ill be getting flight sim 2020 and asseto corsa soon and them ill swap the cpu for a 3600.

I think we have different meaning of "fine" ;)
I've got AC so i thought i'll do few benches with my vega 56 pulse which was left at stock, and i had 580x pulse as well, left at stock settings as vega. My cpu is oc'ed to 3.7ghz, i ran my ramm at 3200mhz and 2133mhz to see what difference that makes. AMD drivers 20.12.1.

OK, either AC had some patches released recently, or freesync is completely broken on that game, or game freaks out when dealing with ultrawide monitor.
Benchmark runs without freesync. Somehow I always had a feeling that CPU was bottlenecking the game, especially with loads of AI opponents. I was getting around 45-60fps with 5700xt and 3900x. But I haven't played the game for quite some time.
Just ran it on 5950x and 6900xt:

Appreciate the info there, looks like I can keep the 1700x for a while. At least until I ever get the flight sim.
Why is the min fps higher at slower ram speed?

quicker than? From quick search even 2700x is ahead of 6700k at 1080p

While there are bigger differences stock for stock - clock for clock, core for core, there isn't a huge amount in it for gaming especially above 1440p and those 4000 series era Intel CPUs tend to overclock fairly well.

3000 series are the minimum to be an upgrade really and only the 5000 series are significantly ahead (around 40-45% increase core for core, clock for clock over Haswell and Ivy Bridge, etc. of that generation in CPU limited games).

EDIT: You might see benchmarks showing a bigger difference but they are usually stock 4000 series CPUs on generic 1600MHz loose timing RAM :s
