Sausages, should I eat them?

They have to put an under-estimate of the use by on anyway; otherwise what if their calculations were out or your fridge isn't quite as cold as someone else's, you get ill and sue them?

They'll be absolutely find the day after. After about 3 days I'd keep an eye on them to see if they LOOK off... after a week I'd just assume they're off.
 
My housemate cooked up and ate sausages with blue fur growing on them, you should be fine, he was!

There's probably more preservative in modern shop bought sausages than anything, so for all others about to ask the same question, follow the advice stated above .. ie SMELL them and if ok, cook well.
