You can definitely get more than 14g in a double basket. Also, supermarket beans that tend to be a little older are generally less 'fluffy' than newer beans so can seem to take up less space in the portafilter.

That actually more depends on how dark a roast they are - the coffee i'm on at the moment (which i'm not a big fan of actually) is a super dark roast so is very very light, really staticky when ground, and takes up much more volume per gram so I only get around 15-16g in a double portafilter basket.

it was Gwilym's disloyalty card (although it looks like a few people have done it since) free 8th coffee at purfrock but i'm pretty sure it was just a one off when he won the WBC

Wash the filter & warm the cup with hot water :)
Use scales to work out how much water to put in otherwise its hard to work out how much water you've put into the v60 vs how much your cup will take.
Pour a little into the coffee grounds to start and let it bloom then pour slowly to top up about 3/4 of the way up the filter paper, let it settle then top up.
Don't try and lift the filter while its hot or has water in, can rip and dump grounds everywhere!
 
you'll find that the volume of coffee varies greatly with the darkness of roast so if your dosing by weight (which is the right way) sometimes it'll hit the shower screen and sometimes it won't. Grind will make a difference but don't worry about that and just concentrate on getting the shot time right by varying the grind.
