Spec me a configuration

I'll be building a new system next week to replace my ever faithful XP2500+ System.

I'll be using a Gigabyte P35 DS3P motherboard.

The system will be my main PC. Used mainly for surfing/downloading/gaming with a fair bit of photo-editing and video compressing.

Initially I'm thinking of a 160GB System drive with the basic OS/Applications/Games installed then a couple of data drives for storage.

The DS3P supports RAID so I was wondering if I should RAID the data drives for a bit more performance. In the past I've liked the performance of two individual drives when buring DVD's and copying from one to another. If I was to RAID them would I still be able to burn a DVD while doing HDD intensive operations at the same time or would two seperate drives be the way forward?

I'm also thinking of having a smaller drive as a temp store for downloaded data so my main data drives can switch to standby when not in use.

I'd appreciate and advice you may have on this. I'm not new to RAID setups but in the past I've not seen as much of a performance gain as I'd like. So, 2 Drives or a RAID'ed pair?
