Spec me a steak

Fillet is tasteless in comparison to ribeye and sirloin that's why they are served with pepper sauces etc, I used to like sirloin and now find ribeye nicer with a better blend of meat and fat, T bone is OK but difficult to cook as the meat shrinks leaving it proud of the pan so not getting the burnt darker bits.

For me it's sirloin / rib eye as thick as you thumb on edge, out from fridge at least an hour before, smoking hot griddle 2 mins each side, wrap in foil dull side in and 6 mins resting, all the juices poured over the chips and some veg hmmmmm

Very good advice. I have just come back from Florence, and had the best steak of my life. "Bistecca alla Fiorentina" was utterly delicious, but you could recreate it over here if you have a good butcher. You just want about a 1k bone in T-Bone Steak. Good quality meat is essential for this, as is olive oil, garlic, rosemary & Thyme.

Fillet is the best by far imo, make sure you read up on how to cook it properly.

Utter, utter tosh.
 
I'd always go for a Rib-eye, but quite frankly I've had some amazing rump steaks from a local farm recently, so in my view as long as you buy a well-hung, superior quality beef then you can't go wrong (as long as you cook it correctly).

Have you got any 'premium' butchers or a local farm that sells its own beef? If so I would tend to try there first.

Oh, and you can't hang a cut of beef in the fridge!

Never had the chance to eat this, but really want to give it a try. Don't fancy doing it myself as I want to make sure it is done the classic way. Not eaten out where it has been on the menu, apart from some crappy French cafe's, so I thought I would give it a miss.

To the OP,

This, unless you want to spend a fair whack and buy a nice fillet.

I would also advise trying a steak cooked medium / rare. I know you say you like them medium / well done, but that is wrong, just so wrong. :p
