Well you don't need to spend that much. Here's a suggestion...

Total: £2,008.87
(includes shipping: £0.00)

Although, if it were me, I'd go with the below and watercool it all with a custom loop. That will give you a quieter system overall, and the best possible performance. That would look something like this, and allowing a good £600-700 for a high end full custom loop.

Total: £1,735.80
(includes shipping: £0.00)

Here is a revised spec... monitor choice is open somewhat, as is the 1080 really. They are all broadly the same performance, it mostly comes to down what brand you prefer and aeshetics. Plus some are easier to deal with ref warranty issues, and I always prefer EVGA in that aspect.

You've got some money left over here for some decent fans, custom cabling and perhaps some LED case lighting.

Total: £2,261.82
(includes shipping: £0.00)

I'd go for a different cooler personally, that won't be the quietest. I'd opt for air if I were you... AIOs don't offer superior cooling and are invariably noisier. The Cryorig R1 would be my choice, although it's not on that configurator. They may add it for you if you ask though. Personally, I'd also always stick with EVGA, Seasonic or Super Flower power supplies also. I've owned that H440 case myself and it's not the best when it comes to temps, due to being somewhat restricted for air flow, but it will be fairly quiet. There's always a trade off there.

windows and considering going water cooling

When you say watercooling, do you mean a custom loop or an AIO? Don't be suckered in to the marketing if it's the latter... they aren't any better than top end air coolers.

The S340 Elite would be a good choice, Corsair Crystal 460X or Enthoo Pro M Glass. Enthoo Luxe is bigger and a good case if you're going for a full on custom loop and might find the 5.25" bays useful, but it might be overkill.

full on water cooling if available within budget

Well a high quality full CPU+GPU custom loop is going to be in the region of £500-600... it will be very tight indeed considering your £2.5K budget includes a monitor as well. You may have to make some compromises on spec.

My second spec in my first post at the top of this thread would get you pretty close, but total cost would still end up a bit north of £2500.

For watercooling components...

Total: £580.10

Grand Total: £2315.90

You may need some 90 degree fittings also, but depends on how you route tubing.

My personal preference would be hard tubing, but that does take more work and will increase cost as you would need a heat gun and more fittings.

is that everything I would need, We've never done wc before

Yeah pretty much I think... 90 degree fittings could be required as I say, so worth getting a few just in case.

You could get a small bottle of dye if you want to have your coolant coloured, or there are other pre-mixed colour options. I just went with the X1 clear as that's a good choice. You can add the dye drops concentrate to that.
