Spices?

I'm fat so I'm on a diet! That means I'm trying to control my food intake and in order to eat a varied diet I'll need to spice meat up a bit or I'll get bored and crave stuff that's not going to help me.

In my cupboard at the moment I have garlic puree (looks like toothpaste), rosemary, thyme, black pepper, salt, cinnamon, oregano and a mix called italian seasoning (which is basically oregano, plus a few others). I also have hot chilli powder, jalfrezi mix as well.

I'll be eating mainly chicken, but also fish (probably white), and some pork, and beef - nothing is really off the cards as long as it's easy to get hold of and isn't high in fat.

So... what kind of spices should I be getting hold of to wake the meat up and make it taste good?

I've been rubbing the garlic puree onto a frozen chicken breast fillet and then putting rosemary and thyme on it and it's been very tasty indeed. Or the italian seasoning.. But eventually I'll get bored with that so I need a few pointers.
 
Chili flakes, paprika and cajun spice. Cajun spice on salmon; NOM NOM NOM! :D

You can make a dry rub for chicken with cajun spice, paprika, chili flakes, pepper, salt and a bit of herbs.
 
Cumin, Parpika and Chilli Flakes/powder. Mix onto chicken breast with a little oil and grill :D

I just had grilled chicken with garlic (granules :O ), dried basil, paprika and some tabasco sauce with a little olive oil. Was very tasty and moist.

Are the spices/herbs/seasonings that I always have stock of.

A really good dry rub for pork is

1 Tbs Finely Chopped Onion
1 Tbs Finely Chopped Garlic
1 Tsp Mustard Powder
1 Tsp Smoked Paprika
1 Tsp Chilli Powder
1 Tsp Cumin
1 Tsp Oregano
1 Tbs Brown Sugar
1 Tbs Salt

Rub that over a bone in loin joint, then stick it in the oven (straight in a pan) covered in tin foil at 90c for about 10-12hours.

After cooking remove from oven, shred and pour the liquid that has come out of the meat during cooking over the shredded meat and mix.

Awesome pulled pork :)


ps - feel free to remove the sugar.

Thanks folks - I think that gives me enough of a start, I can google specifics and work out by trial and error what works.

One more thing... I'm going to order some with my groceries.

Is it worth taking the near double the price Shwartz stuff, or is Sainsbury's own make just as good?

I'm thinking by the time I use it the extra cost per meal will be fractions of a penny.

When I buy my herbs / spices by the jar I tend to go with the supermarket own brand, simply becuase it's cheaper and only added into the mix (so to speak). Whenever I can't source which spice / herb it is then I'll but Shwartz or whatever and tbh mate I'm honestly hard pushed to tell the difference between any of them.

I think that's enough to be going on with.... there's no gaping holes in my spice cupboard are there? :)

Hmm. This is all they have - "Sainsbury's Crushed Chillies 32g" and I already have "Sainsbury's Hot Chilli Powder 33g" in the cupboard...

I think I might need to get by with the 101 other spices for now :)
