I have read that on a NAS you should change it from DHCP to a Static IP, but I'm not sure how I would do this? is it a simple procedure.

My NAS should be with me soon but I'm unclear on how you would choose a different IP address. I have seen how you get into IP settings on DSM.

From Synology: Static IP: If you already have some fixed IP addresses, you can adopt this connection type for network interfaces.

I don't have any static IPs so unclear how I would get one.

Set your router DHCP to something like 192.168.0.50-254
Then you have the range 192.168.0.2-49 for use as static IPs.
Set your NAS to 192.168.0.2 for instance.
192.168.0.1 being your router.
All as an example choose your own ranges. If that doesn't make sense you probably need to do a bit more reading on the subject.

If you simply want your NAS to stick to the same IP you may even be able to just set it as such on your router, basically fix what ever DHCP address it was given so it never gets released and reallocated to something else.

Yes that's all I need and sounds much easier
Mac Binding (or bind IP to MAC)

I know that. OP probably doesn't.
You are right I didn't know lol

I would set the static IP router side.

I bought my Synology NAS in 2017, set it to a static IP on my network and it's worked flawlessly through my VM router. In 2021 I bought a TP Link router and it worked flawlessly with that. Earlier this year I decided to upgrade to a Unifi network and once I had set up some VLANs I could not access my NAS even though Unifi could see it but it didn't have an IP address. Took me ages to remember that in 2017 I had set the static IP via the NAS itself so I created a VLAN with the same number structure, got into the NAS and set it so it would be allocated an IP from the router.

I've now got it set to a static IP within Unifi.

Of course if you only ever use routers that use the same IP range, as my VM router and TP Link router obviously did, then it won't be an issue but did that issue ever cause me an hour or so of head scratching till I remembered.
